Peanut Butter Bars – Tastes just like a Reese’s Peanut Butter Cup

I’m sure most people have seen or had these at a potluck before.  I never made them until now and my husband’s co-workers went crazy over them.  They really do taste like a Reese’s peanut butter cup!  Only it is 9×13 in size instead of 1.5″ in diameter  🙂  I think it would be fun to use a biscuit cutter to cut these out, too.  Although it would waste some of it – they would look more authentic.

The dough is so thick, I bet you could also make these into cake pops.  Or shape them into eggs for Reese’s eggs or any shape.

*instead of graham cracker crumbs, you can also use rice krispies, cheerios or even saltine crackers for a sweet and salty taste

Peanut Butter Bars
yield 9×13″ pan… 15-20 servings depending on cut size

1 cup butter, melted (2 sticks or 8 oz.)
2 cups graham cracker crumbs* (or about 1 sleeve plus 3 whole graham crackers processed in a food processor)
2 cups powdered sugar
1 cup peanut butter (I used Skippy Natural)
8 oz. (1 and 1/2 cups) semi-sweet chocolate chips (I used Hershey)
4 Tb. peanut butter

1.  Mix the melted butter, graham cracker crumbs, powdered sugar and 1 cup of peanut butter in a great big bowl with a great big spoon.  Once it is all combined thoroughly, press the mixture into a 9×13″.  I didn’t have trouble with my pyrex.  Just in case you could line it with foil or parchment.
2.  In a medium microwave safe bowl, melt the chocolate chips in 30 second intervals.  Remember to stir the last few chocolate chips in to melt because you don’t want to burn the chocolate.
3.  Add the 4  Tb. of peanut butter to the melted chocolate and mix thoroughly.  Pour this over the peanut butter layer and smooth using an offset spatula.  Put in the fridge for 1-2 hours and you’re done!

  1. the vegetarian recipe site, vegweb, has had a recipe like this i have been making for years (at least since 2000), with crushed rice crispies instead of the graham cracker crumbs. SO good, i think a few thigh inches has been los to these bars!
    Now i am feeling the need ot make these to see how the crackers work instead of cereal 🙂
