Caramel Apple Crisp Bars

I hope everyone has their turkey in the refrigerator to thaw for Thanksgiving!  Here is the link again to a freezer-friendly Thanksgiving.  Of course, you can use these at Christmas or any upcoming party.

These caramel apple crisp bars are fast and scrumptious!  We had them at book club and they were awesome!

Caramel Apple Crisp Bars

Ingredients

  • 2 cups old-fashioned oats (or quick cooking)
  • 1 cup flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. ground cinnamon
  • 1/8 tsp. ground nutmeg
  • 1 cup butter, soft
  • 3/4 cup brown sugar
  • 1 package (11 oz.) caramel bits or unwrapped caramels
  • 2 Tb. milk
  • 2 cups apples, peeled and chopped (I used 1 Granny Smith and 1 Gala)*
  • *To keep from browning quickly, place in a bowl of lemon juice and water.

Instructions

  1. Preheat oven to 350 degrees.
  2. Make a sling with foil or non-stick foil in a 9x13 pan by putting it in the pan and letting the foil hang off the sides a few inches.
  3. In a medium size bowl: whisk together oats, flour, baking soda, salt and spices.
  4. In a large bowl: mix together with mixer or by hand the butter and sugar 1-2 minutes. Add the oats/flour mixture. Set aside 1 cup of the mixture.
  5. Press the rest of the mixture into the 9x13 pan. Bake that for 15 minutes.
  6. While that bakes, microwave the caramels and milk until gooey and melted.
  7. Place the apples on the baked crust. Drizzle some of the caramel - about half - on the apples.
  8. Use the leftover crumble mixture and put that on top of the caramel and apples.
  9. Bake 20-25 minutes. Make sure it is all the way cool before cutting. Lift the bars out of the pan and drizzle the rest of the caramel on top. You will probably need to heat it up a little again. Cut into squares and serve.
  10. The bars kept well the same day and kept well overnight in the refrigerator.
