Book Update: Sooooo… no books so far.  I found this show called “The Good Wife” while trying to find something to watch on the elliptical machine.  I’m hooked!  I remember Julianna from ER which was one of my favorite shows as a kid.  I loved anything Michael Crichton.

Recipe:  I know I know.  It sounds weird.  Chocolate covered gummy bears?!  But give it a try – I promise.  My whole family is addicted to these things!  You have the fruity goodness of the gummy bear, the slightly crunchy outer chocolate shell – what’s not to like?  Something fun and easy to make on your day off from work New Years or as a New Years Eve snack!  The kids will have a blast and you’ll have something unique at the next party.

Chocolate Covered Gummy Bears

Ingredients

  • 1 bag (12 oz.) milk chocolate chips
  • 1 tsp. coconut oil (optional for added taste)
  • 2 lbs. fresh gummy bears

Instructions

  1. In a microwave safe bowl, melt the chocolate chips at 20 second intervals. Add coconut oil and melt if using.
  2. Dip each gummy bear in one at a time. Use a fork to fish the gummy bear out. Shake off the excess chocolate and place onto wax paper. Once all of the gummy bears are covered, chill in the fridge for 30 minutes or more. Store in an airtight container and enjoy!

    1. Oh I love cinnamon! I bet those would be so yummy like the chocolate cocoa mixes that have cinnamon in them! Our co-op sells gummy bears by flavor as well. I noticed some flavors were worked really well like granny smith apple and orange and raspberry. The others were yummy, too. If we can find marshmallow flavored gummy bears, I think that would be awesome.
