Energy Balls – with only 4 ingredients!

Happy All-the-Seasons-Day!  We had snow this morning here in St. Louis and kicked the heat on inside the house.  Tomorrow is a high of 80 degrees and I will be flipping on the air conditioning so we can all sleep with the heat.  Good grief what a crazy weather day!

So, medjool dates went on sale at Aldi and I decided to try and make some energy balls out of them.  I like having a snack on hand that doesn’t need a fridge and it is so easy the kids can make them (as long as they are aware of the food processor safety rules of course!).  Energy balls seemed all the rage the past few years with their healthy and simple ingredients and can-do attitude.  Because you know my kids need more energy, right?

Before they could devour them, I took a few photos for you 🙂  Here is the result!  And stay tuned – the kids made two awesome delicious dessert recipes that you will LOVE for Easter!

Energy Balls – with only 4 ingredients!

Ingredients

  • 8 medjool dates, dried
  • 3 Tb. peanut butter (all natural preferred but not required)
  • 1/4 cup dark chocolate chips, mini chocolate chips or your favorite chopped chocolate
  • 2/3 cup old fashioned oats or quick oats

Instructions

  1. First, take a small knife and make sure you remove the pits from the medjool dates. If the dates are rather dry instead of moist, simply place them in a bowl of hot water and allow to soak for 15 minutes then drain.
  2. Next, if using old fashioned oats, then put those in the food processor first and pulse 4 or 5 times. The oats should now look like quick oats. Pour these into a clean bowl. If using quick oats, you don't need this step.
  3. Now put the dates into the food processor. Add the peanut butter and run the food processor until you have a paste.
  4. Add the chocolate and oats. Pulse until the energy ball dough is thoroughly combined but does not need to be processed into a paste.
  5. Take a small scooper or your hands and roll the dough into 1" balls. This is easier if your hands are slightly wet.
  6. Place the energy balls in a container or on a cookie sheet and place in the fridge for at least 15 minutes to firm up. Serve and eat! To store, simply place in an airtight container in the fridge. Or for longer storage place in the freezer for up to 6 months.
