Whole Grain Chia Waffles

- 1 and ¾ cups almond milk (or regular milk)
- ½ cup unsweetened applesauce
- 1 egg
- 2 Tb. chia seeds
- 1 tsp. vanilla
- 1 and ¼ cup white whole wheat flour
- ½ cup old fashioned oats
- ¼ cup ground flaxseed
- 4 tsp. baking powder
- ¼ tsp. salt
- ½ tsp. ground cinnamon (more or less to taste)
- In a medium bowl, mix the wet stuff: milk, applesauce, egg, chia seeds and vanilla.
- In a great big bowl, mix the dry stuff: flour, oats, flaxseed, baking powder and salt.
- Add the wet stuff to the dry stuff and stir to combine.
- Let it sit for about 10 minutes while heating up the waffle iron.
- Spray the waffle iron with cooking spray and cook per the manufacturers directions.
- Eat while warm.
- For leftovers, cool completely and place in a freezer bag. When you want a waffle in the morning, simply pop it in the toaster or toaster oven.
No chia seeds? No problem! Add in another egg for a total of 2 eggs.
