Sloppy Joes and BBQ Rub Recipe – for the Freezer

Back in my Freezer Meals post, I made super simple sloppy joes that still tasted good.  I know some other people have made sloppy joes, like myself, with complicated recipes that take simmering and many ingredients.  The whole family loved these and it was soooo easy – better than Manwich in my opinion.  Just thaw and heat.

I forgot to get my meals out of the freezer at church after my presentation, so I threw this into the fridge in the morning.  About half thawed and half frozen.  It took a little longer to heat, but I used the lid on the skillet and still tasted great.

BBQ Beef Sloppy Joes:

1 cup ketchup, 2 tbsp Pampered Chef Smoky Barbeque Rub**, 2 tsp cider vinegar

Add this to one portion of beef mixture, combine in large resealable plastic bag. Freeze up to 3 months.

(Beef mixture was 3 lbs. of ground beef cooked with 3 cloves of garlic, minced and 1 diced onion.  Then divided into thirds.  Each third was one portion.)

If cooking immediately…..combine ingredients in skillet and bring to a simmer over medium heat.

BBQ Rub

½ cup chili powder
¼ cup brown sugar
¼ cup kosher salt
2 Tb. black pepper
2 tsp. cayenne pepper (or less if children find it too strong)

Mix it all up!
