Peppermint Bark and Cookie Roundup

Peppermint Bark

8 oz. semisweet chocolate*
2 tsp. shortening or canola oil
1/2 tsp. peppermint extract, divided
8 oz. white chocolate*
25 mini candy canes or candies, crushed

*a number of people, including myself, have had trouble with the layers separating.  They don’t seem to separate when good-quality chocolate in bar form.

1.  Line a 9×9 pan with parchment or wax paper and smooth it out.
2.  Melt the semisweet chocolate and 1 tsp. of shortening or oil together in the microwave or double boiler.  I like the microwave because then there is no chance water will get in and seize the chocolate.  Just make sure to go low and slow.  I do 30 second intervals at 70% power.
3.  When the chocolate is melted, stir in 1/4 tsp. of peppermint extract.  Pour chocolate into pan and spread evenly.  Fridge for an hour.
4.  Melt the white chocolate and 1 tsp. shortening or oil in microwave or double boiler.  Stir in 1/4 tsp. peppermint extract.  Pour over the semisweet layer and spread.  Sprinkle with candy immediately.  Gently press them into the chocolate.  Fridge until it is hard and break into pieces.
