Whole Grain Chia Waffles

Ingredients
  • 1 and ¾ cups almond milk (or regular milk)
  • ½ cup unsweetened applesauce
  • 1 egg
  • 2 Tb. chia seeds
  • 1 tsp. vanilla
  • 1 and ¼ cup white whole wheat flour
  • ½ cup old fashioned oats
  • ¼ cup ground flaxseed
  • 4 tsp. baking powder
  • ¼ tsp. salt
  • ½ tsp. ground cinnamon (more or less to taste)
Instructions
  1. In a medium bowl, mix the wet stuff: milk, applesauce, egg, chia seeds and vanilla.
  2. In a great big bowl, mix the dry stuff: flour, oats, flaxseed, baking powder and salt.
  3. Add the wet stuff to the dry stuff and stir to combine.
  4. Let it sit for about 10 minutes while heating up the waffle iron.
  5. Spray the waffle iron with cooking spray and cook per the manufacturers directions.
  6. Eat while warm.
  7. For leftovers, cool completely and place in a freezer bag. When you want a waffle in the morning, simply pop it in the toaster or toaster oven.
Notes
No chia seeds? No problem! Add in another egg for a total of 2 eggs.
